The majority of the fruit for this wine was destemmed, but we keep the grapes wholecluster for about 14% of the total mix, just enough to provide some interesting spicy aromas and tannic structure to the blend. All fermentation was spontaneous, and the average length of primary maceration was 14 days before pressing into a mix of neutral French and newer Oregon oak barrels. Wine rested in barrel for nine months before being racked once prior to bottling unfiltered and unfined.
