Gewürztraminer is another grape that elicits strong emotions based on some bad experiences with soapy treacly versions. 

We approached this wine as a playful experiment: how long can we let a skin-ferment go? What would it do? Turns out, the answers are (1) around 300 days, and (2) makes it delicious. Destemmed Gewürztraminer hangs out in egg-shaped fermenters for about ten months before being blended with a touch of carbonic Pinot gris and Chardonnay.
